Ganko Ittetsu Ramen

Ganko Ittetsu Ramen serves Sapporo-style ramen inside the arcade building on Harvard Street in Brookline. The kitchen starts the soup in a wok, cooking the seasoning base with vegetables before adding broth, which gives the bowl a different character from ramen assembled ingredient by ingredient. The noodles come from Nishiyama in Sapporo and have a thick, chewy texture. Choices include miso, shoyu and sesame-based tan-tan, with extra pork, egg or garlic available to build out your bowl. Vegetarian versions of the miso ramen are offered, though the menu contains wheat and soy. Service is first come, first served; check the restaurant’s online waitlist before heading over. It is a straightforward stop when a hot bowl of noodles is the whole plan.
