Cutty’s in Brookline Village puts crispy shallots, sharp cheddar and Thousand Island dressing on slow-roasted beef for its Beef 1000 sandwich. Turkey gets the same treatment, while the Ham Dijon pairs smoked ham with butter, mustard and gherkins on a baguette. Meat-free choices have just as much going on: the Greens Shallot combines Swiss chard with saffron yogurt, and the Rabe T.J. adds tomato jam to broccoli rabe and two cheeses. Add tomato soup, limeade or a brown sugar cookie to make lunch of it. Regular service runs Wednesday through Saturday and ends in the afternoon. The shop is a short walk from the Brookline Village Green Line stop.
