Florenza
Florenza is the Roman-style pizzeria and Italian cafe at 164 Sumner Street in East Boston, named for the owner’s grandmother, who taught him pan pizza in this neighborhood. The dough uses 100 percent imported Italian flour, 85 to 90 percent hydration, and a 48-to-72-hour ferment. Tomatoes are imported from Naples. Salumi comes from Rovagnati and Golfera, without added nitrates. Pizza bianca pies include sausage and rapini, prosciutto and fig, and a mushroom-ricotta pie. Panini cover Roma caprese, chicken parm, meatball, and the Florenza Italian. Breakfast runs 8 a.m. to noon; espresso, cappuccino, and gelato stay on through the afternoon. Cocktails are dine-in only. Hours are 8 a.m. to 8 p.m. Sunday through Thursday, 9 p.m. Friday and Saturday. This is Sumner Street’s Roman slice and sandwich shop, with coffee in the morning and pizza later.
